To prove that there is a celebration for just about everything, October 1 marked National Kale Day in the United States. So what is kale? The vegetable is in the same family as broccoli, cauliflower and cabbage. For people in Russia, kale is kapusta. In Italy, it is called cavolo. Hindi speakers call it gobhi. Or if you speak Japanese, the name is karu. Kale is a so-called superfood. This means it helps prevent disease and keeps people healthy. Kale is filled with powerful nutrients. It provides 1,000 percent of the U.S. daily advised amount for vitamin K. In other words, by eating kale you more than meet the nutrition requirements set by United States health officials for vitamin K. Kale also has almost 100 percent of the daily suggested intake of both vitamin A and C. Kale also has folate, a B vitamin that is important for brain development. And it contains other essential vitamins and minerals. Kale is good for your heart and may help fight against some kinds of cancer. It also tastes great, even uncooked. Here is a trick. Rub or massage the kale leaves with olive oil and seasonings. The leaves will soften. After you massage your kale leaves, add a little olive oil and sweet balsamic vinegar as a dressing. Steaming is a good method for cooking kale. You can also cook it with a little oil, garlic, hot pepper and salt. It is simple, healthy and tasty. And you can mix kale with olive oil and bake it for 15 minutes until it gets light and airy. You also may want to blend kale into a thick drink called a smoothie. You will need a device called a blender for this. But the health benefits may be worth the purchase price.
